Description

A Koleda family classic, Stuffed Peppers is light yet filling, healthy and homestyle.

Ingredients

  • 4 green bell peppers
  • 1/2 lbs ground Beef
  • 1 cup rice
  • 1/2 onion
  • 1/2 cup cheddar cheese

Directions

  1. Remove top and clean peppers. Par-boil them for 2-3 minutes.
  2. Cook ground beef with onions until brown.
  3. Cook the rice as directed.
  4. Combine the beef, rice, and shredded cheddar cheese in a bowl and mix thouroughly. Spice as desired.
  5. Stuff filling into peppers and cook at 350 degrees for about 30 minutes.

Notes

  • Add fresh tomato to the stuffing for a sligh variation.
  • Optionally top the pepper with breadcrumbs before baking.
