Description

A zucchini and leek soup inspired by our CSA ingredients.

Ingredients

  • 3 green zucchinis, diced
  • 1 large leek, chopped (white part only)
  • 2 cloves garlic, chopped
  • 1 tbsp olive oil
  • 1 tbsp fresh Thyme
  • 1 cup chicken stock
  • salt and pepper

Directions

  1. Sauté leek, zucchini, and garlic in pan with olive oil until soft and goldening.
  2. Add chicken stock, salt, pepper and thyme.
  3. Bring to a boil and then simmer 20 minutes or until desired consistency.
  4. Once tender blend with immersion blender.
