Stuffed Peppers
Description
A Koleda family classic, Stuffed Peppers is light yet filling, healthy and homestyle.
Ingredients
- 4 green bell peppers
- 1/2 lbs ground Beef
- 1 cup rice
- 1/2 onion
- 1/2 cup cheddar cheese
Directions
- Remove top and clean peppers. Par-boil them for 2-3 minutes.
- Cook ground beef with onions until brown.
- Cook the rice as directed.
- Combine the beef, rice, and shredded cheddar cheese in a bowl and mix thouroughly. Spice as desired.
- Stuff filling into peppers and cook at 350 degrees for about 30 minutes.
Notes
- Add fresh tomato to the stuffing for a sligh variation.
- Optionally top the pepper with breadcrumbs before baking.
