Zucchini Leek Soup
Description
A zucchini and leek soup inspired by our CSA ingredients.
Ingredients
- 3 green zucchinis, diced
- 1 large leek, chopped (white part only)
- 2 cloves garlic, chopped
- 1 tbsp olive oil
- 1 tbsp fresh Thyme
- 1 cup chicken stock
- salt and pepper
Directions
- Sauté leek, zucchini, and garlic in pan with olive oil until soft and goldening.
- Add chicken stock, salt, pepper and thyme.
- Bring to a boil and then simmer 20 minutes or until desired consistency.
- Once tender blend with immersion blender.
